S'mores Cookie Recipe

S'mores cookies are a delicious twist on the classic campfire treat! Here’s a recipe to make s’mores cookies that are gooey, sweet, and packed with all the s’mores flavors you love.



Ingredients:

- 1 1/2 cups (190g) all-purpose flour

- 1/2 teaspoon baking soda

- 1/4 teaspoon baking powder

- 1/4 teaspoon salt

- 1/2 cup (115g) unsalted butter, at room temperature

- 1/2 cup (100g) granulated sugar

- 1/2 cup (110g) packed brown sugar

- 1 large egg

- 1 teaspoon vanilla extract

- 1 cup (175g) semisweet chocolate chips

- 1 cup (100g) mini marshmallows

- 1 cup (90g) crushed graham crackers (about 8-10 crackers)


Instructions:

1. **Preheat Oven:** Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.


2. **Mix Dry Ingredients:** In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.


3. **Cream Butter and Sugars:** In a large bowl, using an electric mixer or stand mixer, cream the butter, granulated sugar, and brown sugar until light and fluffy.


4. **Add Egg and Vanilla:** Beat in the egg and vanilla extract until well combined.


5. **Combine with Dry Ingredients:** Gradually add the dry ingredients to the butter mixture, mixing until just combined.


6. **Add Chocolate Chips and Graham Crackers:** Stir in the chocolate chips and crushed graham crackers.


7. **Form Cookies:** Scoop tablespoons of dough and roll into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart. Press a few mini marshmallows into the tops of each cookie dough ball.


8. **Bake:** Bake for 10-12 minutes, or until the edges are lightly golden. The centers might look slightly underbaked, but that’s okay; they’ll continue to set as they cool.


9. **Add More Marshmallows (Optional):** For extra gooey s’mores, add a few more mini marshmallows to the tops of the cookies as soon as they come out of the oven. You can also put them back in the oven for an additional 1-2 minutes to let the marshmallows melt a bit.


10. **Cool:** Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
